In the last decade, México has emerged as a vibrant player on the international wine scene, becoming a major producer and exporter of wine. However, beyond the award-winning labels and designer wineries, a quiet but powerful movement is taking root and bearing fruit: organic viticulture and low-intervention winemaking. Guanajuato, and particularly San Miguel de Allende, is becoming well-known across the country as a centre of sustainable and ethical practices.
Today, Guanajuato has at least four organic vineyards, some of which are certified by international organisations such as Oregon Tilth and Ceres. These certifications validate the absence of pesticides and synthetic fertilisers, as well as a commitment to biodiversity and ecosystem balance. These wineries respect the environment and grow wines that express the character of the soil and climate with greater purity. The wines have a unique quality that establishes them as outstanding Mexican wines on the national scene.
Additionally, at least four wineries in Guanajuato adhere to low-intervention principles, relying on indigenous yeasts, minimal sulphur addition and non-industrialised processes. This approach has given rise to a new generation of natural wines that are livelier, more authentic and more surprising, capturing the attention of sommeliers and oenophiles across the country.
San Miguel de Allende, with its blend of culture, art, tourism and gastronomy, has become the ideal location for this trend to flourish. Restaurants with curated menus, wine bars and specialised events are helping to make these labels visible and educate local and international consumers.
Organic viticulture is more than just a passing fad; it represents a conscious, ethical choice and a declaration of identity. At a time when origin matters more than ever, Guanajuato offers not only wines, but rather a message of authenticity, sustainability and the future, setting itself apart from other regions by focusing on quality over quantity. Here, every glass of wine represents a tale of dedication, expertise and a deep connection to the land.
