San Miguel Taste: A Pop-Up Asian Farm-To-Table Experience At Nudol

San Miguel de Allende’s dining scene never ceases to surprise, and last week Nudol hosted a very special pop-up that brought together community, creativity, and unforgettable flavors. Chef Alexis Torres took over Nudol’s eclectic Asian kitchen and crafted a “farm-to-table with an Asian twist” menu that wowed diners from start to finish.
I’ve long wanted to try Naakary’s renowned offerings in the beautiful eco-community of Sosnabar, tucked along the road to Jalpa. Thanks to Nudol’s owner, Dany Maerkel, and Chef Alexis, I finally had the chance. Dany mentioned that these collaborations will continue, with more local chefs being invited to showcase their talents, making Nudol not only a restaurant but also a hub for culinary exchange and community building.
Chef Alexis presented a thoughtful variety of dishes, beginning with a crispy flor de calabaza tempura that set the tone for the night. A comforting vegetarian ramen with a rich veggie broth followed, alongside addictive Korean-style wings paired with creamy jocoque dip. The duck baos with sweet-and-sour sauce were a crowd favorite, while the katsudon served with fresh kimchi brought depth and spice to the table. The standout dish was a coconut red curry short rib stew (estofado), perfectly balanced with ramen noodles and soy greens, a plate that married warmth with elegance.
Dessert was equally impressive, courtesy of pastry chef Roxanna Prieto. Her delicate Japanese cheesecake was the perfect finale, light, slightly tangy, and take my word for it, utterly delicious.
This pop-up highlighted not only the creativity of the chefs but also Nudol’s vision of building bridges through food.
